Baking Cookies

I have been very busy because I will be participating at the bake sale at Ev's daycare this coming Friday.  But I figure that I need to know how to bake a proper cookies.  I bake sometimes but I always modify the recipes that I usually reduce sugar amount (by a lot, because my logic is that if I want the dessert to be sweeter, I can always add honey) and substitute butter with yogurt, i.e. to make it much healthier. I love the healthier desserts I make but not so much for my husband or some of my friends who grew up in this country who think the dessert of the choice should be chocolate cake with chocolate mouse inside and icing on top in addition to the sprinklers if possible.

After doing some research among friends and the local library,  as a try out, I decided to make 2 types of oatmeal raisin cookies, one with milk chocolate and another one with dried pineapples.  We spent an afternoon over the weekend and baked together,  it was such a fun activity with the family.   Ev was a big help in measuring the ingredients with his father and loved using the ice cream scoop to drop the cookies!

The cookies are very delicious.  I prefer the pineapple ones and both Ev and my husband love the milk chocolate ones (didn't I say about people who were born in the US :).
